Cauliflower 65 Recipe- Easy and Quick Cauliflower/Gobi 65 For Vegetarian- Restaurant Style

This is a modified version of Chicken 65, specially made for my Vegetarian friends…

Ingredients –

  1. Cauliflower florets- 2 cup (wash and dry)
  2. Ginger-garlic paste -2 tbsp.
  3. All purpose flour (maida) -3 tbsp.
  4. Corn starch (corn flour) -2 tbsp.
  5. Whole Curry leaves-10-12
  6. Chopped coriander leaves – 1/2 cup
  7. Chopped curry leaves -6-7
  8. Red chilli powder -1 tbsp.(as per your taste)
  9. Black pepper powder -1 tbsp.
  10. Salt to taste

Method –

  • Add all the ingredients into the mixing bowl (don’t add whole curry leaves).
  • Use water to prepare thick paste and add cauliflower florets.
  • Coat the cauliflower florets well, adjust salt if needed and keep it aside for 30 minutes.
  • Heat oil into the kadhai/pan on medium heat and fry the cauliflower florets until it turns light golden, keep stirring.
  • Add curry leaves into hot oil.
  • Drain fried cauliflower florets on a kitchen tissue.

Instant Bread Rasmalai Recipe-Easy and Quick Rasmalai Recipe- How To Make Bread Rasmalai–Indian Sweet Recipe

Ingredients –

  1. White Bread slices -2-3
  2. Cardamom powder – 2 pinch
  3. Sugar -2 tsp (as per your taste)
  4. Almonds – 10-12 (soak and peel the almonds)
  5. Chopped pistachio for garnishing
  6. Saffron (kesar) –few strands
  7. Whole milk -1 liter

Method –

  • Take any shape of cookie cutter, and cut the breads.
  • Add almonds and few saffron strands into the blender jar, grind into fine
    paste.
  • To make flavored milk, bring the milk to boil in a non-stick pan on high to low flame.
  • Add the grinded almond, pistachio paste into the boiled milk
  • Keep stirring to avoid the milk sticking to the bottom of the pan.
  • When the milk become little thicker, add sugar, cardamom powder into the milk and keep stirring.
  • Flavored milk is ready, turn off the heat and let it cool for 5 minutes.
  • Soak the bread slices into the flavored milk for few minutes.

Boiled Eggs-Indian Street Food Recipe

Ingredients –

  1. Eggs – 4-5
  2. Black pepper
  3. Chopped onions
  4. Chopped green chili or red chili powder (as per your taste)

Method –

  • Take a pan, add enough water to cover the eggs and boil on medium heat.
  • Turn off the heat once it starts boiling and let it cool down for 8-10 minutes.
  • Peel the eggs once it cool down, and slice them into equal halves.
  • Add all the ingredients (as per your taste) and serve warm.Breakfast

Crispy Okra / Bhindi Fry

Ingredients –

  1. Okra (Bhindi)-15 to 20 pieces
  2. Chickpeas flour (Besan)-2 tbsp
  3. Rice flour -1 tbsp
  4. Red chilli powder -1 tsp
  5. Ginger-garlic paste -1 tbsp
  6. Gram masala powder-1 tsp
  7. Salt to taste
  8. Vegetable oil as needed
  9. Turmeric powder -1 tsp

Method –

  • Cut the bhindi/okra length wise.
  • Add besan, rice flour, salt to taste, Turmeric powder, ginger-garlic paste, gram masala powder, red chilli powder and Vegetable oil-1tsp into the bowl, and mix well.
  • If required you can add little water also.
  • Mix them nicely until they get coated on the okra.
  • Heat oil in a pan/kadhai on medium heat.
  • Place okra  in the oil gently.
  • Fry until it becomes crispy and brown in color.
  • Keep tossing and flipping the okra.
  • Take them out once they become brown in color.
  • Bhindi/okra Fry is ready to serve.

Thandai Cold Drink / Holi Special Cold Drink

Ingredients-

  1. Poppy seeds (khuskhus) –1 tsp
  2. Fennel seeds –1 tsp
  3. Whole Green cardamom seeds or powder –1/2 tsp
  4. Whole milk –2 cup (boiled and cooled)
  5. Saffron (kesar) –few strands
  6. Almonds –9 -10
  7. Cashews –9 -10
  8. Pistachio /Pista-9 -10
  9. Black pepper –2-3 (optional)
  10. Sugar –2 tbsp (as per your taste)

Method –

  • Add poppy seeds, fennel seeds, whole cardamom seeds, saffron, almonds, cashews, pista, sugar per your taste and black pepper into the blender jar and make a fine powder.
  • Add the grinded mixture into the milk (as per your taste) and keep it in fridge for 2-3 hours.
  • You can keep the remaining powder in refrigerator to be used afterwards.
  • After 2-3 hours filter this mixture using a strainer.
  • Garnish with pista powder and saffron strands.
  • Thandi cold drink is ready to serve…

Jaggery Rusgulla Recipe

Ingredients –

  1. Whole milk – 1 liter
  2. Lemon – 1-2 (you can also use vinegar)
  3. Jaggery  (Gudh) – 1/2 cup (as per your taste)
  4. Cardamom powder – 2 pinch

Method –

  • To make rasgulla, you need to first make paneer/chena from the milk. You can also use unsalted paneer from market.
  • Heat whole milk in a non-stick pan and bring it to boil.
  • Keep stirring once a while.
  • When milk is boiled, remove the milk from heat and keep aside for 1-2minutes.
  • After 1-2 minute add lemon juice, as the milk starts to ferment stop adding lemon juice.
  • Place a muslin cloth/cotton cloth in a strainer and put the fermented milk on it to separate remaining water from paneer.
  • Add 2.5 cup of water into the pan, let it boil.
  • Once water is boiled add cardamom powder, jaggery and cook for 2-3 minutes.
  • Now put chena on the plate and using your hand press for 5-6 minutes until chena becomes completely smooth (You can use blender also).
  • Take the small portions of chena in your hand and shape them into balls.
  • Roll the chena balls between your palms and keep all of them on a plate.
  • Now put all the paneer balls in boiling chashni and close the lid, Cook for 15-20 minutes on high heat. 
  • Turn off the stove and let it cool down completely. Once the cools down open the lid.
  • Rasgullas have become puffy and doubled in size. Now take them out in a bowl and serve it.

Tomato Sweet and Spicy chutney

Ingredients –

  1. Tomatoes –3-4
  2. Vegetable oil /ghee/butter –2 tbsp.
  3. Bay leaves –1-2
  4. Fennel seeds –1 tsp.
  5. Seedless Dates –3-4  pieces if you have dates with seed then remove the seeds before preparation
  6. Sugar or Jaggery–1/2 (as per your taste)
  7. Red chilli powder –1/2 tsp.
  8. Garam masala powder –1/2 tsp.
  9. Salt to taste

Method –

  • Cut the tomatoes into small pieces.
  • Heat oil in a pan, add fennel seeds, bay leaves and sauté for few minute on medium heat.
  • Add chopped tomatoes and dates and sauté for 1 minute.
  • Add salt to taste, red chilli powder, jaggery or sugar mix well and cook for 1-2 minutes.
  • Add garam  masala powder, mix well and cook for 1-2 minutes.
  • Tomato chutney is ready to serve.
