Sandesh/ Sondesh (सोंदेश मिठाई ) – Bengali Sweets- Indian Desserts- Navratri Special

Ingredients –

  • Paneer / Indian Cottage cheese (hang to drain whey completely) – 1 cup
  • Khoya / Mawa / Milk powder – 1/2 cup
  • Powder sugar (as per your taste)- 3 tbsp.
  • A pinch of cardamom powder
  • Ghee / Butter – 1 tbsp.
For Garnishing –
  • Chopped Pista, Tutti frutti, Saffron etc.

Method –

  1. Add Khoya, Paneer, Sugar, cardamom powder into the non stick pan.
  2. Mix will and cook on low heat.
  3. Keep stirring continuously.
  4. Cook until smooth dough is formed.
  5. Once ready, turn off the heat and allow the mixture to cool.
  6. Grease your palms with ghee and make small balls from the dough, roll it between your palms.
  7. Press with your thumb in the middle of it.
  8. Repeat the same for rest of the dough.
  9. Lightly grease the molds with ghee.
  10. Put a little topping mixture in each mold.
  11. Press some of the prepared paneer mixture on top of the topping in each mold and shape.
  12. Garnish the Sandesh (as per your choice).
  13. Sandesh is ready, refrigerate for few hours  and serve.

Chom Chom Recipe(बड़ी आसानी से बनाये मार्केट जैसा चम् चम् मिठाई) –Bengali sweet Recipe

Ingredients –

  1. Whole milk – 1-2 liter
  2. Lemon (you can also use vinegar)
  3. Sugar – (as per your taste)
  4. Few Whole Cardamom
  5. Food color (Red, Yellow) – as per your choice
  6. For coating – Dry coconut powder

Method –

For chena (paneer) –

  • Boil whole milk in a  pan on medium heat.
  • Keep stirring once a while.
  • When milk is boiled switch off the heat and start adding lemon juice, as the milk starts to ferment stop adding lemon juice.
  • Place a muslin/cotton cloth in a strainer and put the fermented milk in it, to separate remaining water from chena.
  • Add 1/2 cup water into the chena and squash.
  • Place the chena on the plate and mix well until its becomes smooth.
  • Divide the chena into three portions and add 2 drops of  food color in one portion and mix well.
  • You can add different colors for other portions if you want.
  • Take small portion of chena in your hand and shape it into small ball or cylinder shape.
  • Roll the chena balls between your palms and keep them on a plate.
  • Add 3 cups of water into the pan, cardamom powder, sugar and let it boil.
  • Now put all the chena balls in boiling sugar syrup and close the lid, Cook for 15-20 minutes on high heat.
  • After 15- 20 minutes open the lid and cook for other 5 -10 minutes.
  • Turn off the stove and let it cool down completely.
  • Now take them out in a strainer for 15-20 minutes to drain extra sugar syrup.
  • Coat with coconut powder or khoya .
  • Chom chom sweets are ready to serve..

Note –

  • You can also use readymade unsalted Paneer from market.

Sandesh/ Sondesh Sweet- (झटपट बनाये दूध और चॉकलेट के संदेश)-Bengali Sweets- Indian Desserts

Ingredients –

  • Paneer / Indian Cottage cheese
  • Powder sugar (as per your taste)
  • A pinch of cardamom powder
  • Coco powder (for chocolate sandesh)
For Garnishing –
  • Chopped Pista, Tutti frutti, Saffron and sprinkle

Method –

  1. Add paneer, powdered sugar, cardamom powder into the non stick pan.
  2. Mix will and cook on low heat.
  3. Keep stirring continuously.
  4. Cook until it turns thick in consistency.
  5. Split the dough in two equal parts, one for dudh  sandesh and another half for chocolate sandesh.
  6. For making chocolate sandesh add coco powder(as per your taste).
  7. Mix and Cook for 1 minute.
  8. Once ready, turn off the heat.
  9. Grease your palms with ghee & make small balls from the dough, roll it between your palms.
  10. Press with your thumb in the middle of it.
  11. Repeat the same for rest of the dough.
  12. Garnish the sandesh (as per your choice).
  13. Sandesh is ready, refrigerate and use.

Rasgulla In Microwave(15 मिनट में बनाये माइक्रोवेव में रसगुल्ला)-Rosogulla Sweet- Bengali Recipe

Ingredients –

  • Paneer (chena) – 1 cup
  • Sugar- 1/2 cup (as per your taste)
  • Whole cardamom – 1-2

Method –

  1. Using your hand press for 5-6 min, until paneer becomes smooth (You can use blender also).
  2. Soft dough is ready.
  3. Take the small portions of paneer in your hand and shape them into small balls.
  4. Roll the paneer balls between your palm and keep all of them on a plate.
  5. Add 2 cups of water, sugar, cardamom into the microwave bowl.
  6. Mix well, till sugar gets completely dissolved.
  7. Now put all the paneer balls in sugar water.
  8. Place the bowl in microwave oven, and set the timer for 5 minutes.
  9. After 5 minutes check the rasgullas.
  10. Again check the rasgullas and set the time for 5 minutes.
  11. After approximately15 minutes in total your rasgullas will become soft and fluffy.
  12. Rasgullas has become puffy & doubled in size.
  13. Now take them out in a bowl .
  14. Soft Rasgullas are ready to serve…

Rajbhog Indian Festival Sweets- (कुकर मे राजभोग)–Bengali Sweets– Easy And Quick Rajbhog In Presser Cooker- Only 30 minutes

Ingredients –

  1. Whole milk – 3 cups
  2. Vinegar or lemon – 1-2 tsp.
  3. Sugar – 1 cup (as per your taste)
  4. Food color – Yellow
  5. A thread of saffron

Method –

  • To make Rajbhog, you need to first make Paneer/chena from the milk. You can also use unsalted Paneer from market.
  • Heat whole milk in a pan and bring it to boil.
  • Keep stirring once a while.
  • When milk is boiled, turn off the heat.
  • Add 1 tbsp Vinegar, mix well as the milk starts to ferment stop adding Vinegar.
  • Place a muslin cloth/cotton cloth in a strainer and put the fermented milk on it to separate remaining water from Paneer.
  • Add 3 cups of water, 1 cup sugar(as per your taste) and few thread of saffron into the cooker.
  • You can also use low calories sugar supplements if you are diabetic.
  • Cover and  allow to come to boil.
  • Now put chena on the plate and add 1tsp sugar, yellow color…………………

  • Turn off the stove and let it cool down completely. Once the pressure cooker cools down open the lid.
  • Rajbhog Sweets have become puffy and doubled in size.
  • Now take them out in a bowl and serve it.

Today I have completed one year of my blog, thank you all my followers and friends for your support. To celebrate this I am sharing my very special sweet dish recipe with you all, I hope you will like it Smile

Ingredients –

  1. Whole milk – 1 liter
  2. Lemon – 1 (you can also use vinegar)
  3. Sugar – 1 cup (as per your taste)
  4. Cardamom powder – 2 pinch
  5. Food color – as per your choice
  6. All purpose flour/Maida– 2 tsp.

Method –

  • Boil whole milk in a  pan.
  • Keep stirring once a while.
  • When milk is boiled switch off the flame and start adding lemon juice, as the milk starts to ferment stop adding lemon juice.
  • Place a muslin/cotton cloth in a strainer and put the fermented milk in it, to separate remaining water from chena.
  • Add 1/2 cup water into the chena and squash.
  • Add 2 cup of water into the pan, cardamom powder, sugar and cook for 2-3 minutes.
  • Now put chena in to the blender and blend for 1-2 seconds.
  • Place the chena on the plate, add maida and mix well for 2 minutes.
  • Divide the chena into two portion and add 2 drops of  food color in one portion and mix well.
  • You can add another color into second portion if you want.
  • Take the small portions of chena in your hand and shape them into small balls and cylinder shape.
  • Roll the chena balls between your palms and keep them on a plate.
  • Now put all the chena balls in boiling sugar syrup and close the lid, Cook for 15-20 minutes on high heat.
  • After 15 minutes open the lid and cook for other 5 -10 minutes.
  • Turn off the stove and let it cool down completely. Open the lid once it is cooled.
  • Chom-chom has become puffy and doubled in size.
  • Now take them out in a strainer for 15-20 minutes to drain extra sugar syrup.
  • Coat with coconut powder or khoya and serve.
