Holi Special (होली स्पेशल)- Chena / Paneer Rolls– Indian Sweets- Festival

Ingredients –

  • Mawa / khoya for stuffing
  • Yellow Food color (optional)
  • Sugar as per your taste
  • Chena (Paneer) – 1 cup
  • Cardamom powder (optional) – 2 pinch

Method –

  1. Put Mawa/khoya on the plate, add sugar(as per your taste) and  food color.
  2. Using your hand press for 5-6 minutes until it becomes completely smooth.
  3. Take small portion of khoya in your hand and shape them into oval shape.
  4. Khoya Stuffing is ready.
  5. Prepare all khoya stuffing in same way.
  6. Put the chena /paneer on the plate.
  7. Using your hand press for 5-6 minutes until it becomes completely smooth.
  8. Take small poison of chena on your hand and flatten.
  9. Place the khoya stuffing in the chena and cover.
  10. Chena roll is ready, prepare all in same way.
  11. Heat a pan on medium heat.
  12. Add 1 cup sugar(as per your taste) 1 1/2 cup of water into the utensil and let it boil.
  13. When chasni starts boiling, put chena rolls in boiling chashni.
  14. Cover and cook for 5 – 7 minutes on high heat.
  15. After 5-7 minutes, open the lid.
  16. Flip the chena rolls, cover and cook for another 5-7 minutes.
  17. After 15 min, turn off the heat.
  18. Once ready, let it cool down.
  19. Take them out in a strainer to drain extra sugar syrup.
  20. You can garnish with pistachios  (Pista) and saffron.
  21. You can store in the refrigerator for almost a week.

Papad Ke Samose And Rolls(स्वादिष्ट समोसे और रोल्स बनाये पापड़ से )- Snacks- Starter- Appetizer

Ingredients –

  • Papad – 3-4 (big size)
  • Boiled potato – 2 (peeled)
  • Chopped onions – 1/2 cup
  • Chopped/ Grated garlic – 1 tsp
  • Salt to taste
  • Turmeric powder – 1/2 tsp
  • Chopped coriander leaves
  • Garam masala –1/2 tsp
  • Chilli (as per your taste)
  • Cumin seeds – 1 tsp
  • Vegetable oil for frying

Method-

  1. Add 1 tbsp oil into the pan on medium heat.
  2. Add cumin seeds, cook for few seconds.
  3. Add chopped onion and garlic, cook for few minutes.
  4. Add mashed potato, turmeric powder, chilly, garam masala & salt to taste.
  5. Mix well and cook for 2-3 minutes.
  6. If you like roasted peanut you can add that too.
  7. Add chopped coriander leaves, mix well & turn off the heat.
  8. Take a Papad, apply some water evenly, this will make the Papad soft.
  9. Leave the Papad for sometime.
  10. Add the stuffing now in the center and cover it gently.
  11. Apply some water on the edges, roll and seal it properly.
  12. Repeat the same for another roll.
  13. For samosas, take a Papad  and apply some water.
  14. Papad has become soft now, cut the Papad into two halves.Take one half on your hand and apply some water on the edges.
  15. Make a cone, add little stuffing into the cones.
  16. Apply little water and fold the edges a bit to seal the samosa.
  17. Repeat the same for another samosa.
  18. Keep a aside for 10 minutes. This will also allow the samosa pocket to seal properly.
  19. Heat the oil in a pan / kadhai to medium heat.
  20. Fry all the Papad samosa and rolls in the heated oil.
  21. Keep stirring until it turns golden in color.
  22. Once ready, transfer the fried Papad samosa and rolls into a kitchen or absorbent tissue.
  23. Papad samosa and rolls are ready, serve with tomato ketchup or Green chutney.

Dates Delight (खजूर की मिठाई)-Dates Roll- Sugar Free Sweets

Ingredients –

  • Seedless dates (khajur) – 1 cup (cut into small pieces)

If you have dates with seed then remove the seeds before preparation

  • Ghee/butter -1 tbsp.
For stuffing –
  • Mix dry fruits (as per your choice)-

Almonds, Cashew nuts, dry coconut, and pistachio (Pista).

  • Milk for prepare dough
  • Food color – green, yellow
  • Chopped cashew nuts
  • Roasted poppy seeds (khas khas) – for coating.
  • Cardamom powder – 1 tsp.

Method –

  1. Add all the dry fruits into grinder jar to make fine powder.
  2. Divide the powder into two equal parts to prepare two types of stuffing.
  3. In first part add cardamom powder, sugar as per you taste and chopped cashew & mix well.
  4. Add yellow food color & with the help of milk make a soft dough.
  5. Repeat the same for other part of the dough with green color.
  6. Dough is ready we will use this for stuffing.
  7. Heat ghee or butter in the kadhai on low heat.
  8. Add chopped dates, cook for 1-2 minutes.
  9. Keep stirring continuously.
  10. After 2 minutes turn off the heat, take out the mixture in a plate and let it cool down.
  11. Once it cools down shape the dates into a ball.
  12. Apply ghee/oil on the surface and roll the dates using rolling pin.
  13. Cut the flattened roll into two equal parts.
  14. Roll the green stuffing in the same way and cut into two equal halves.
  15. Take half of the yellow stuffing and roll it into cylindrical shape.
  16. Place all the stuffing on the dates roll and with the help of our hand cover it properly.
  17. Sprinkle roasted poppy seeds on the surface and roll it properly.
  18. Roll is ready, wrap the roll into plastic wrap or aluminum foil.
  19. Repeat the same for other half of the dates roll.
  20. Keep it in fridge for 1 hour, so it can settle down.
  21. After an hour remove plastic wrap from dates roll and cut the roll into slices.
  22. Dates delight is ready to serve.
  23. Keep it in fridge and use.

Bread Paneer Vegetables rolls

Bread paneer vegetable roll recipe is good idea for kids tiffin box. This is not only delicious but also full of health benefits I am sure your kids will like this.

Ingredients –

  1. Paneer/ cottage cheese(crumbled) – 1 cup
  2. White/brown slices of bread – 6
  3. Salt to taste
  4. Vegetable oil/butter
  5. Pizza sauce –2 tbsp
  6. All purpose flour(Maida) /corn starch–1 tbsp
  7. Chopped carrots –1/2 cup
  8. Green peas –1/2 cup
  9. Chopped onions –1/2 cup
  10. Ginger-Garlic paste (optional)
  11. Chopped green chilli (optional)

You can use any kind of vegetables (beans, capsicum, etc.)

Method –

  • Heat a pan on medium flame, add oil and chopped onions sauté for few minutes. (If you are using ginger-garlic you can add now with onions)

  • Add chopped carrot and green peas, sauté them until it turns golden in color.

  • Add crumbled paneer and salt cook for few minutes.

  • After few minutes add pizza sauce mix all together and cook for few minutes. Once this is ready turn off the flame let it cool down.

  • Trim the edges of the breads.

  • Make a thin paste of the Maida with little water, brush the edge of the bread with this paste. Place a mixture on the edge of the bread, press the edges from all sides to seal the edges.

  • Heat a pan with butter and sallow fry all the breads roll till they turn golden brown in color on both the sides.
  • You can also bake the bread rolls instead of frying.
