Rasmalai (रसमलाई)-Rasgulla Soaked In Milk Syrup-Indian Recipe-Festival Recipe

Ingredients

  1. Chena / Cottage cheese -1 cup
  2. Sugar (as per your taste)
  3. Whole milk – 1 liter
  4. Sliced dry fruits (as per your choice)
  5. Saffron (optional)- For color and aroma
  6. Whole Cardamom or powder

Method –

  • Put chena on the plate and using your hand press for 5-6 minutes until chena becomes completely smooth (You can use blender also).
  • Take small portion of chena in your hand and shape it into small balls.
  • Roll the chena balls between your palms, flatten it slightly.
  • Prepare rest of chena balls in the same way. 
  • To make flavored milk, bring the whole milk to boil in a pan on high to low heat.
  • Once milk is boiled, reduce the heat to medium temperature.
  • Keep stirring to avoid the milk sticking to the bottom of the container. 
  • When the milk become thicker, add sugar and cardamom powder to the milk.
  • You can use saffron instead of cardamom powder if you want.
  • Flavored milk is ready, turn off the stove.
  • In another utensil add sugar and water, cook till sugar is completely dissolved.
  • When chasni started boiling, put chena balls in boiling chashni and cook for 15-20 minutes on high heat.
  • Turn off the stove. Chena balls are ready, let it cool down completely.
  • In the final step take each chena balls from the sugar syrup squeeze gently and dip the chena balls to concentrated flavored milk.
  • Cook for 1-2 minutes on medium heat.
  • After 2 minutes turn off the heat, Rasmalai is ready.
  • Garnish with dry fruits and serve cold.

Dry Chana Masala(पंजाबी स्टाइल में बनाये सुखा छोले मसाला )-Punjabi Recipe-Dry Chana

Ingredients –

  • Chickpeas / Chana / Khabuli Chana – 1 cup (soak chana overnight to 8 hours).
  • Red chilly powder (as per your taste)
  • A pinch of Asafetida (hing)
  • Turmeric powder –1/2 tsp
  • Salt to taste
  • Whole Cumin seeds ( jeera) – 1 tsp
  • Garam masala powder- 1 tsp
  • Cumin powder – 1 tbsp
  • Vegetable oil for cooking
  • Dry mango powder (aamchur powder) – 1/2 tsp
  • Curry leaves – 5-6
  • Whole Dry chilly – 1-2
  • Dry coconut powder (optional)

Method –

  1. Add chana, 1 cup water and turmeric powder in pressure cooker.
  2. Cover and Cook for 2-3 whistles on medium heat.
  3. After 2-3 whistles, switch off the heat and let it cool down.
  4. Open the lid, Chana is boiled properly.
  5. Keep aside.
  6. Heat a pan with oil on medium heat.
  7. Add cumin seeds, red chilly, hing, chopped garlic and cook for few minutes.
  8. Now add boiled chana and mix well.
  9. Add salt, curry leaves, red chilly powder, garam masala, cumin powder and aamchur powder.
  10. Mix well and sprinkle some water.
  11. Cover and cook for 1- 2 minutes on low heat.
  12. After 1-2 minutes, turn off the heat.
  13. Dry chole is ready to serve…

7 Cups Burfi(बर्फी बनाये एक नए तरीके से )-Barfi Recipe

Ingredients –

  • Besan / chickpea flour/ gram flour –1 cup
  • Grated coconut – 1 cup
  • Milk – 1 cup
  • Ghee / butter – 1 cup
  • Sugar – 2 cups (as per your taste)
  • Cardamom powder – 1/2 tsp.
  • Dry fruits (powder) – 1 cup (optional)

Method –

  1. Heat a pan on medium heat.
  2. Add besan and begin to roast until it turns light golden in color.
  3. Keep stirring time to time.
  4. Add coconut powder and mix well.
  5. Roast for 2 minutes on low heat.
  6. Add sugar, milk, cardamom powder and ghee.
  7. Mix well, cook on medium to low heat.
  8. Continue cooking until the mixture begins to thicken.
  9. Keep stirring for 3-4 minutes so it doesn’t burn..
  10. Cook till it becomes little dry.
  11. Once mixture is ready, turn off the heat.
  12. Apply ghee or you can also use butter paper or aluminum foil on the tray.
  13. Pour the mixture and then spread it evenly across the tray.
  14. Press it gently with a spoon.
  15. Let it cool down for sometime, so it can settle down.
  16. Once 7 cups barfi settled, cut it into pieces as per shape of your choice.
  17. 7 cups barfi is ready to serve…

Crispy Chilli Potatoes (घर पे बनाये आसन तरीके से क्रिस्पी चिल्ली पोटैटो)-Starter/Appetizer

Ingredients –

  • Potatoes – 2 (big size) Wash and Peel
  • Red chilli Flakes (as per your taste)
  • Chopped garlic – 1 tbsp.
  • Salt to taste
  • Vegetable oil for frying
  • Corn starch/Corn flour – 2 tbsp (if required add more)
  • Sesame seeds (Til) – 1 tsp
  • Soya sauce
  • Chilly sauce
  • Tomato ketchup
  • Vinegar
  • Black pepper
  • All purpose flour (Maida) – 3 tbsp (if required add more)
  • Spring onions
  • Onion, Capsicum (cut into square shape)

Method

  1. Cut potatoes length wise.
  2. Add salt, Maida and corn flour/ starch, mix well
  3. Cover and keep it in fridge for 20 min.
  4. Heat oil into the pan..
  5. Add chopped garlic, fry for few minutes.
  6. Add onions and capsicum, fry for few minutes.
  7. Add spring onions, salt, red chilli flakes and cook for 1 min.
  8. Add tomato ketchup, vinegar, soya sauce & chili sauce..
  9. Add little water into corn starch(1 tbsp), make a paste.
  10. Add Sesame seeds (Til) and mix well.
  11. Sauce is ready, turn off the heat.
  12. Drop the potatoes in oil to deep fry on medium heat.
  13. Drain potatoes on a kitchen tissue.
  14. Again fry on high heat till it gets little brown.
  15. Double frying makes potatoes more crispy.
  16. Fry rest of the potatoes as well.
  17. Heat the sauce and add fried potatoes, mix well.
  18. Cook for 1 minute, turn off the heat.
  19. Crispy chilli potatoes is ready.
  20. Garnish with sesame seeds, and serve hot.

Popcorn Chicken (घर में बनाये KFC स्टाइल पॉपकॉर्न चिकन)–Chicken Recipe

Ingredients –

  • Boneless chicken fillet (wash and cut it into small pieces)
  • Corn flour/Corn starch –1 tbsp.
  • A pinch of Black paper
  • Bread crumbs (for coating)
  • Red chilli powder (as per your taste)
  • Kashmiri Red Chilly Powder (For color)
  • Egg –1
  • Salt to taste
  • Oregano –1/2 tsp.
  • Turmeric powder (Kills germs)
  • Ginger – garlic paste- 1 tbsp.
  • Vegetable oil for deep frying

Method –

  1. Cut chicken fillet to tiny bite sized pieces, wash it nicely.
  2. Add little turmeric powder, mix well.
  3. Add chilli powder, ginger-garlic paste, herbs, egg, corn flour, salt to taste, and mix well
  4. Keep marinate chicken for 30 minutes in a refrigerator.
  5. If you like you can add chilly according to your taste.
  6. After 30 minutes, add bread crumbs and mix well properly.
  7. Heat the oil in a pan/kadhai to medium heat
  8. Pick up each of these pieces and fry them till golden.
  9. Keep stirring and fry on medium heat.
  10. Pierce a piece of chicken with knife to check if it is fried well.
  11. Drain popcorn chicken popcorn on a kitchen tissue.
  12. (If you want to make it more crispy coat the pieces once again with bread crumbs)
  13. Popcorn Chicken is ready, serve hot with ketchup.

Bread Rasmalai (झटपट बनाये ब्रेड की रसमलाई)- Rasmalai Recipe-Indian Sweet Recipe

Ingredients –

  1. White Bread slices
  2. Cardamom powder – 2 pinch
  3. Sugar -2 tsp (as per your taste)
  4. Chopped pistachio for garnishing
  5. Saffron (kesar) –few strands (optional)
  6. Whole milk -1 liter

Method –

  • Take any shape of cookie cutter, and cut the breads.
  • To make flavored milk, bring the milk to boil in a non-stick pan on high to low flame.
  • Keep stirring to avoid the milk sticking to the bottom of the pan.
  • When the milk become little thicker, add sugar, cardamom powder into the milk and keep stirring.
  • Flavored milk is ready, turn off the heat and let it cool down.
  • Soak the bread slices into the flavored milk for few minutes.
  • You can use extra Rabri to prepare more Bread Rasmalai

Soft Khaman Dhokla (नाश्ते में बनाये सॉफ्ट और स्पंजी ढ़ोकला)- Gujarati Recipe-Snacks Recipe

Ingredients –

  • Besan/gram flour – 1 cup
  • Coconut grated for garnishing
  • Mustard seeds – 1 tsp
  • Curry leaves – 5-6
  • Ginger- chilly paste (as per your taste)
  • A pinch of Turmeric powder
  • Salt to taste
  • Sugar (as per your taste)
  • Fruit salt (ENO) -small pack

Method –

  1. Add salt, turmeric powder and ginger- chilli paste into besan.
  2. With help of water make a thick batter.
  3. Add water into the idli pot, place stand inside it.
  4. Cover and let it boil on high heat.
  5. Take a bowl, grease it with oil…so that batter will not stick on it.
  6. Add fruits salt (Eno) in the batter and mix well.
  7. Batter is fluffy and soft, transfer it to the greased bowl.
  8. Water started boiling, place the bowl over the stand.
  9. Cover and cook on high heat for 15-20 min.
  10. After 20 min remove lid and insert a toothpick at the center, if it comes out clean it means its ready.
  11. Turn off the heat, let it cool down.
  12. Heat oil in a tadka pan on medium heat.
  13. Add mustard seeds, when its begin to splutter, add curry leaves and sugar and cook for few minutes.
  14. Add little water, let it boil.
  15. Once water is boiled, turn off the heat.
  16. Separate the Dhokla from the corners of the bowl with the help of a knife.
  17. Remove the upper part with the help of knife.
  18. Spread tadka on the Dhokla only the amount required to cover it properly.
  19. Sprinkle coconut powder for garnishing.
  20. Khaman Dhokla is ready, cut it in pieces(as per the shape of your choice).
  21. Sprinkle some coconut powder for garnishing and serve with green chutney.

Besan Ke Ladoo/ Laddu- (बेसन के दानेदार लडू)-Festival Recipe- Suji Besan Ladoo

Ingredients –

  • Besan /Chick pea /Gram flour – 1½ cup
  • Powder Sugar (as per your taste)
  • Suji/ Semolina / Rava – 1 tbsp
  • Ghee – ¼ cup (if needed you can add )
  • Green Cardamom (whole /powder) – 1-2
  • Food color (optional) yellow
  • Pistachio (Pista) – 2 tbsp

Method –

  1. Heat a pan/ khadai on low heat.
  2. Add suji, cook for 2 minutes and keep it aside.
  3. Add besan into the same pan, roast until the besan turns golden in color.
  4. Keep stirring time to time.
  5. Once besan turns golden in color turn off the heat.
  6. Take a large utensil, transfer roasted besan, roasted suji, cardamom powder and pista.
  7. Add sugar (as par your taste) and mix well.
  8. Add ghee and mix well.
  9. If it is dry, add the ghee as needed little by little.
  10. Take small portion of mixture, roll them into small ball.
  11. Check if the besan can bind well to roll to balls..
  12. Heat the mixture if it’s getting harder to roll due to cooling.
  13. Store besan ladoo in air tight jars.
  14. Besan ladoo is ready to serve.
