Carrot Laddu / Ladoo (गाजर के लडू) –How To Make Carrot Ladoo–Festival Recipe -Truffles

Ingredients –

  • Carrot – 3 cups (Wash, peel and grate)
  • Sugar – 1 cup (as per your taste)
  • Muskmelon seeds – 1 tbsp.
  • Ghee / Butter – 1 tbsp.
  • Kewra essence / Green cardamom powder – 1 tsp

Method –

  1. Mix grated carrot and sugar in the bowl.
  2. Keep it side for 30 minutes.
  3. After 30 minutes, heat a pan / khadai on medium heat.
  4. Add carrot mixture and mix well.
  5. Sauté until carrots are little soft and it will ooze out some water and get dried.
  6. When the mixture  gets thick in consistency, the color gets brown in color and it emits good aroma.
  7. Cook it until the mixture gets thick and starts to roll like a ball.
  8. Add muskmelon seeds, mix well and cook on low heat.
  9. Turn off the heat, add Kewra essence and mix well.
  10. Cool the mixture but not make it really cold. Cool it little so that you can handle by hand.
  11. Just apply ghee/oil in your hand, make round balls by taking that mixture in your hand.
  12. Carrot ladoo are ready to serve.
  13. You can store them in airtight container Refrigerate and use up to 7 days.

फटे दुध से बनाये स्वादिष्ट बर्फी और लडू- Curdled Milk Barfi- Sour Milk Laddu/Ladoo/Katli

Ingredients –

  • Normal Milk / Curdled Milk
  • Sugar (as per your taste)
  • Dry milk powder – 1/2 cup
  • Dry coconut powder – 1/2 cup
  • Milk – 1 cup
  • Food color (optional) yellow
  • Green cardamom powder – 1/2 tsp
  • Ghee / Butter – ¼ tsp (if needed you can add )
  • Condensed milk (optional)

For garnishing –

  • You can garnishing with tutti frutti, Blanched Pistachio (Pista),  almonds ,Silver warq (optional)

Method –

  1. Heat  milk in a pan and bring it to boil.
  2. Keep stirring once a while.
  3. When milk is boiled, turn off the heat.
  4. Add Vinegar, mix well as the milk starts to ferment stop adding Vinegar.
  5. Place a muslin cloth/cotton cloth in a strainer and put the fermented milk on it to separate remaining water from Paneer.
  6. Take a bowl, add crumbled paneer, coconut powder, sugar, dry milk powder, green cardamom powder and mix well.
  7. Heat a pan, add ghee on a medium heat.
  8. Add  paste  into a pan.
  9. Add coconut powder and mix well.
  10. Keep stirring for 3-4 minutes so it doesn’t burn..
  11. Once mixture is ready, turn off the heat.
  12. Apply ghee / butter on the plate (If you like you can use aluminum foil)
  13. Pour the mixture and then spread it evenly.
  14. Press it gently.
  15. You can garnishing with tutti frutti, Blanched Pistachio (Pista),  almonds ,Silver warq (optional).
  16. Let it cool down for sometime, so it can settle down.
  17. Once Curdled milk barfi  settled, cut it into pieces as per shape of your choice.
  18. Refrigerate to keep it fresh for up to 1 week.

For ladoo / Laddu –

  1. Take small portion of mixture, roll them into small ball.
  2. Coat with dry coconut powder .
  3. You can garnishing with tutti frutti, Blanched Pistachio (Pista),  almonds ,Silver warq (optional).
  4. Curdled milk ladoo is ready to serve.
  5. Refrigerate to keep it fresh for up to 1 week.

Gur Rewari (तिल की रेवारी / लडू)-Til Bites- Til Jaggery Laddu– Sesame Seeds

Ingredients –

  • Sesame seeds (white Til ) – 1 cup
  • Jaggery (gur) – 1 cup (as per your taste)
  • Green cardamom powder (as per your taste)

Method –

  1. Heat a pan on low heat.
  2. Add sesame seeds, roast for 2-3 minutes, till you get a nice aroma.
  3. Once ready turn off the heat.
  4. Heat another pan on medium heat.
  5. Add jaggery (gud), little water, ghee (1 tsp) and mix well.
  6. Prepare Gud syrup and check with your fingers it should be 1 string.
  7. Once Gud syrup is ready add sesame seeds.
  8. Keep stirring it and cook it
    on medium to low heat.
  9. Mix till all the sesame seeds coated with jaggery syrup.
  10. Once its ready, take off from heat.
  11. Pour the mixture into greased plate.
  12. Keep mixing it, grease your palms with ghee or water and make small balls from the dough, roll it between your palms and press it.
  13. Coat with roasted sesame seeds
    evenly.
  14. Repeat the same for rest of the dough.
  15. Gud Rewari (ladoo) is ready, store in an air tight jar.

Besan Ke Ladoo/ Laddu (हलवाई के जैसा बनाये बेसन के दानेदार लडू)-Festival Recipe

Ingredients –

  • Besan /Chick pea /Gram flour – 1½ cup
  • Powder Sugar (as per your taste)
  • Suji/ Semolina / Rava – 1 tbsp
  • Ghee – ¼ cup (if needed you can add )
  • Green Cardamom (whole /powder) – 1-2
  • Food color (optional) yellow
  • Pistachio (Pista) – 2 tbsp

Method –

  1. Add suji into heated pan, roast for 1-2 minutes on low heat.
  2. Heat a pan on low heat.
  3. Add besan, roast until the besan turns golden in color.
  4. Keep stirring time to time.
  5. Once besan turns golden in color turn off the heat.
  6. Add suji, cardamom powder and pista.
  7. Add sugar (as par your taste) and mix well.
  8. Take a large utensil, transfer besan
  9. Add ghee and mix well.
  10. If it is dry, add the ghee as needed little by little.
  11. Take small portion of mixture, roll them into small ball.
  12. Check if the besan can bind well to roll to balls..
  13. Heat the mixture if it’s getting harder to roll
    due to cooling.
  14. Store besan ladoo in air tight jars.
  15. Besan ladoo is ready to serve.

Ingredients –

  • Besan /Chick pea /Gram flour – 1½ cup
  • Powder Sugar (as per your taste)
  • Suji/ Semolina / Rava – 1 tbsp
  • Ghee – ¼ cup (if needed you can add )
  • Green Cardamom (whole /powder) – 1-2
  • Food color (optional) yellow
  • Pistachio (Pista) – 2 tbsp

Method –

  1. Heat a pan/ khadai on low heat.
  2. Add suji, cook for 2 minutes and keep it aside.
  3. Add besan into the same pan, roast until the besan turns golden in color.
  4. Keep stirring time to time.
  5. Once besan turns golden in color turn off the heat.
  6. Take a large utensil, transfer roasted besan, roasted suji, cardamom powder and pista.
  7. Add sugar (as par your taste) and mix well.
  8. Add ghee and mix well.
  9. If it is dry, add the ghee as needed little by little.

  11. Check if the besan can bind well to roll to balls..
  12. Heat the mixture if it’s getting harder to roll due to cooling.

Instant Coconut Ladoo(नारियल के लडू)-Coconut Recipe-Coconut Laddu In 5 Minutes-Nariyal Ladoo

Ingredients –

  1. Grated coconut powder – 1 cup
  2. Sweetened Condensed milk – ½ cup
  3. Food color – yellow, red, etc.
  4. Ghee or Butter – 1 tsp.

Method –

  • Heat a pan/ Kadhai on low heat.
  • Add grated coconut powder, cook for 1-2 minutes.
  • Take out 2 tbsp coconut powder for coating.
  • Add sweetened condensed milk and mix well.
  • Keep stirring continuously.
  • Add ghee and cook for 2-3 minutes.
  • After 2-3 minutes turn off the heat.
  • Let the mixture cool down slightly till it’s cold enough to hold with your hands.
  • Now divide the coconut mix into three equal part.
  • Take one part to make white ladoo, mix red color in another part to make red ladoo and mix yellow color in the remaining to make yellow ladoo.
  • Take small portion of colored coconut mix, roll them into small ball and coat all the ladoo with grated coconut.
  • Coconut ladoo is ready to serve.

Popcorn Sweet Balls/Laddus

Ingredients –

  1. Unsalted Popcorns –4 cups
  2. Jaggery –1 cup
  3. Ghee –1 tsp

Method –

  • Heat a pan/kadai  on medium flame and add ghee into  it.

  • Once the ghee is melted, add jaggery and add a little water to it and allow the jaggery to melt, stir continuously.

  • Once the jaggery is completely melted, turn the stove on low flame and add popcorns to the pan, mix everything.

  • Turn off the flame, keep it aside and let it cool for few minutes.

  • Apply a little water on your hands, pick up the mixture and roll it in a ball. Repeat the same for the complete mixture.

  • Popcorns laddu/balls  are ready to be served.

Besan ka Laddu

Besan ka Laddu is a very delicious recipe that is popular all over India. Besan Ka Laddu can be prepared during festivals and moreover you can also store this laddus in a air tight containers for about 1 month.

Ingredients-

  1. Besan (Chick flour/Gram flour) – 2 cup
  2. Ghee – 1 cup
  3. Powder sugar/ Bura – 1 cup (as per your taste)
  4. Dry fruits –almonds, cashew etc.
  5. Cardamom powder – 2 pinch

Method –

  • Heat ghee in a pan. Add gram flour in pan, and keep stirring continuously for about 10-15 minutes or till gram flour turn light brown in color.
  • Add cardamom powder, cashew, and almonds. Mix well and remove from heat and let it cool down for 5 minutes.
  • Add powdered sugar and mix well. Use your hands to mix this.
  • Shape into lemon sized round laddu and serve.
