Dill Mudhiya/Kofta Recipe

Ingredients –

  1. Wheat flour – 1 cup
  2. Besan (chick flour) – 1/2 cup
  3. Dokhla powder -1/3 cup (optional)
  4. Vegetable oil – 2 tsp for making dough and 2 tsp for shallow fry
  5. Salt as per your taste
  6. Cumin seeds – 1 tsp
  7. Roasted and crushed peanuts – 1 tbsp
  8. Turmeric powder – 1/2 tsp
  9. Red chilly powder or chopped green chilly (as per your taste)
  10. White til (sesame seeds) -1 tsp for preparing dough and 1 tsp for shallow fry
  11. Wash and chopped Dill (soya sag) –1 cup

Method –

  • Add all the ingredients into a bowl and mix well.
  • With help of water prepare knead thoroughly to prepare the dough.
  • Divide the dough into equal portion and roll each into cylindrical shape, dill mudhiya is ready to Cook.
  • Heat 2 cup water in idli maker or rice cooker, grease with oil and steam mudhiya for 15-20 minutes
  • You can check with toothpick or knife if mudhiya is cooked properly or not.
  • Dill mudhiya is ready, turn off the heat and let it cool down.
  • Slice the cooked dill mudhiya  into half-inch pieces
  • Heat oil into the kadhai/pan, add sesame seeds and green chilly and cook for few minutes.
  • Keep stirring periodically to make sure it cooked evenly.
  • Dill mudhiya is ready, you can serve with sauce as snacks or starters
  • You can add dill mudhiya to gravy and prepare dill mudhiya kofta curry.

Beetroot Halwa/Pudding

Ingredients –

  1. Beetroot –1/2 cup (peel, wash and grate the beetroot)
  2. Milk – 1 cup
  3. Ghee or butter – 1 tbsp.
  4. Dry fruits –Sliced almonds,pistachios, etc.
  5. Cardamom powder – 1 pinch
  6. Sugar – 2 tbsp (as per your taste)

Method –

  • Pre-Heat a pan on medium heat and add ghee into it.
  • When ghee is melted add grated beetroot in the pan.
  • Roast for 2-3 minutes and stir constantly.
  • After 2-3  minutes add milk and cook until all the milk gets absorbed completely.
  • Now add sugar into it. Cook until it dries completely.
  • Keep stirring constantly so that the beetroot doesn’t stick to the pan.
  • Now add cardamom powder, dry fruits into it and mix well.
  • Beetroot  halwa is ready, turn off the heat and serve beetroot  halwa in a bowl as a dessert.

How To Make Chocolate Dipped Strawberries

Ingredients –

  1. Strawberries
  2. White chocolate (bars/chips)
  3. Dark chocolate (bars/chips)

Method –

  • Wash and clean the strawberries, keep it a side.
  • Break the dark chocolate bars into small pieces (not required if using chocolate chips)
  • Place in a microwave safe bowl and heat the chocolate for 20 seconds. Whisk till it become smooth, you can heat for another 10-20 seconds if chocolate is not melted properly.
  • You can also use double boiler to melt the chocolates.
  • To prepare the double boiler, place an container with 1 cup of water on stove and bring it to boil, place another container slightly less than the size of the container at the bottom.
  • Place the dark chocolate chips into the double boiler for melting. Keep stirring on low heat until it melts completely. Keep aside for 1-2 minutes.
  • Using a fork  dip one strawberry at a time in the melted chocolate to get a chocolate coating, repeat the same for rest of the strawberries.
  • Now place the chocolate coated strawberries in a separate plate.
  • Refrigerate the strawberries for 10 minutes.
  • Now break the white chocolate bars in small pieces (not required if using chocolate chips) into the double boiler for melting.
  • Once white chocolate is melted completely, use a fork to make striped patterns of melted white chocolate on the chocolate coated strawberries.
  • You can also use food sprinkles to garnish the chocolate coated strawberries, after 10 minutes.
  • Chocolate Coated Strawberries are ready to serve.

Flower Rose(Gulab) Pitha Recipe

Valentines day is here, so I am sharing an Valentines Day special recipe with you. You can try this romantic dish at home Smile

Ingredients –

  1. All purpose flour/Maida  – 1 Cup
  2. Milk – 1 cup
  3. Butter or Ghee – 1 tbsp
  4. Food color (red, yellow, green)
  5. Sugar (as per your taste) – 1 cup
  6. Cardamom powder (optional)
  7. Vegetable oil for deep  frying

Method

  • Heat a kadai or pan on medium flame.
  • Add milk, Ghee and all purpose flour and mix well.
  • Cook for 1-2 minutes on low flame, keep stirring constantly.
  • After 2 minutes switch off the heat,transfer the dough into a plate.
  • Knead the dough thoroughly for 1-2 minutes after it become soft.
  • Divide the dough into a three to four equal part, add colors and mix well.
  • Take a small ball, and with the help of rolling pin, roll the dough in circle shape.
  • Use a glass to cut the flattened dough into small circles.
  • Follow the instructions in the video to shape the dough into a rose.
  • You can mix more than one colored dough, to make a multi-color rose
  • Follow the instructions in the video to make leaves of the rose.
  • Add 1 cup sugar with 1 ½ cup of water in another pan to make sugar syrup. Cook it until all the sugar dissolves into the water and become little thick (approx. 4-5 minutes).
  • When the syrup is ready, turn off the flame, add cardamom powder into it and allow it to cool down for few minutes. Check with your fingertip, when you see 1 thread of the sugar syrup between your fingertips, it means sugar syrup is ready.
  • Fry Rose Pitha on low flame, you need lot of patience while frying, if you increase the heat this might remain uncooked from inside.
  • When it starts floating in the oil, flip the Rose Pitha until it turns light brown in color.
  • Dip the fried Rose Pitha  2-3 at a time into the warm sugar syrup for few seconds and transfer to another plate.
  • Flower Rose  Pitha is ready to serve.

Orange Peel Candy Recipe

Ingredients –

  1. Orange –2
  2. Sugar – 1/3 cup
  3. Extra Sugar for coating

Method –

  • Cut oranges into quarters and peel the skin away from the fruit carefully
  • Cut the peel into slices and remove extra white skins from the inner layer of the peels, otherwise your orange peel candies may taste bitter.
  • Place the peel into the pan and add enough water so that the peel is covered completely. After boiling for 2 minutes, drain the water from pan. Repeat this step 2 times, this is required to remove the bitterness of the orange skin.
  • Add 2 cup water and sugar into the pan, bring it to boil and keep stirring constantly.
  • Cook peeled strips for 30-35 minutes on low heat and keep stirring for 3-4 minutes until the peel strips are soft and slightly translucent.
  • Once its done, turn off the stove and allow the peels to cool down completely.
  • Take the peels one by one and roll them in sugar.
  • Allow them to dry for 7-8 hours.
  • You can store home made orange peel candy for up to 2-3 weeks in an air-tight container.
  • Instead of coating the peels in sugar you can also use melted chocolate to coat the orange peels.

Sweet Corn Fried Rice

A very simple Fried rice made without the use of any sauces, quick and easy rice recipe for lunch box or dinner.Smile

Ingredients –

  1. Cooked rice –1 cup
  2. Chopped green capsicum(Bell pepper) –1/2 cup
  3. Frozen sweet corn /Boiled sweet corn–1/2 cup
  4. Chopped garlic –2 cloves
  5. Green chili as per your taste
  6. Onions medium size sliced–1 cup
  7. Salt to taste
  8. Vegetable oil/butter for cooking –1 tsp
  9. Black pepper –2 pinch
  10. Cashew,raisins etc. (optional)
  11. Cumin seeds – 1tsp

Method

  • Heat oil into the pan, add cumin seeds, chopped cloves and cook for few minutes.
  • Add onions cook until the onions is slightly tender.
  • Add sweet corn, chopped capsicum and sauté them.
  • Add cooked rice, salt to taste, black pepper and toss well.
  • Cover the pan and cook for few minutes.
  • Sweet corn fried rice is ready to serve.

Broccoli Pakora recipe/Broccoli recipe

Ingredients –

  1. Broccoli florets –3 cups
  2. Gram flour(besan) –1/2 cup
  3. Rice flour –1/3 cup
  4. Turmeric powder –1/2 tsp
  5. Salt to taste
  6. Oil as needed
  7. Garam masala –1/2 tsp
  8. Chopped green chilies/Red chili powder(as per your taste)
  9. Ginger-Garlic paste – 1/2 tbsp
  10. Turmeric  powder – 1/2 tsp

Method –

  • Add broccoli florets to salted hot water and after sometime drain the water from the pan.
  • Add broccoli florets into mixing bowl.
  • Add besan, rice flour, salt to taste, turmeric powder, red chili powder, garam masala, ginger-garlic paste and mix well.
  • Sprinkle water if required and coat the broccoli well with flour.
  • Add oil in frying pan, heat on medium temperature and fry until it turns golden brown.
  • Drain the fried broccoli on a kitchen tissue.
  • Broccoli Pakora is ready, serve hot with Masala tea or coffee.
